Ichiro’s Malt Double Distilleries is a pure malt that combines sweetness and firmness. A sweetness partly inherited from aging in Japanese oak barrels. The firmness is on the other hand from ex-sherry and hogshead barrels in which the malt from the Hanyu distillery has benefited.
Nose :
Fruity (Mirabelle, damson) and cereal (oat flake, orgeat), a hint of anise and cinnamon appears first delicately, as if sprinkled. Then the fruits make a noticeable return, well accompanied by quince paste. With more aeration, red fruit jelly (raspberry, strawberry) and caramel candy enrich the aromatic palette.
Palate :
Pear and prune fruit pastes mark the attack, first warm and spicy (pepper). Followed by herbal notes (dry grass) and the bitterness that often accompanies them. The mouth then takes on a new complexity.
Finish :
The fruit fades, the flesh gives way to the skin: that of a freshly peeled Comice pear, with its granular aspect. Spices take hold of the mouth again, but they are softer and accompanied by a slight astringency.
